Ai Fiori Bartender Jesse Squier’s “Fall for Wine” Cocktail

ai-fiori-collageJesse Squier, Level 2 Certified Sommelier and bartender at the Michelin-starred Ai Fiori, gives us this recipe for a perfect fall cocktail twisting together red wine, applejack, and bourbon to warm those cool nights. Jesse moved to New York City to attend the Institute of Culinary Education (ICE) where he received a culinary arts and culinary management degree. While studying, he worked at New York City’s Northern Spy Food Co. and Spice Market. He also attended the International Culinary Center (ICC) in California and New York City to prepare for the Master Sommelier test.

“Fall for Wine” Cocktail

2 oz red wine (any medium body red)
1.5 oz applejack
0.5 oz bourbon
0.25 oz lemon juice
0.25 oz simple syrup
Rosemary sprig

1. Pour 2 ounces of red wine into a glass with ice
2. Shake applejack, bourbon, lemon juice, and simple syrup in a cocktail shaker
3. Strain into the glass with wine
4. Garnish with fresh rosemary sprig
