Sunset Pig Tequila Cocktail, Harvard and Stone, Aaron Polsky - Wine4Food

The Sunset Pig cocktail recipe comes to us from Aaron Polsky at the ever popular Harvard & Stone cocktail bar in Los Angeles. It combines tequila and peach liquor with husk cherries and Tabasco in what sounds like a crazy marriage, but it is actually crazy delicious and the stuff craft cocktails are made of! Aaron states that “The Sunset Pig is one of the most popular drinks at Harvard and Stone that incorporates two savory ingredients, husk cherries and Tabasco, which make it easier to pair with food.” Pairing cocktails with food is an expanding trend in the culinary world and we’re loving all of the exciting and successful experimentation that’s taking place.  Time to drink it all in!

Ingredients:

1½ ounce Herradura Blanco or other 100% agave tequila
½ ounce Giffard Peche (or another peach liqueur)
½ ounce simple syrup
¾ ounce lime juice, fresh
1 dash Tabasco sauce (e.g., 2-3 drops)
2 ground husk cherries, husked and muddled
1 peel of grapefruit or pomelo for garnish

Directions:

First, de-husk your cherries i.e. remove the crinkly paper-like wrapping that they come in.  Once the husks are removed, put into your shaker and muddle. Next, fill your shaker with ice and then pour in the rest of the measured out ingredients. Shake vigorously and then strain into a rocks-filled glass. Lastly, Garnish with grapefruit or pomelo peel, serve, sip, and enjoy!
