Just in case you haven’t been thinking about the delicious modern wines coming out of Greece…I’m here to remind you! One of my favorites is made on Santorini from Assyrtiko grapes…but winemakers all over Greece are now using Assyrtiko, often in blends. The great Biblia Chora winery is in northern Greece, and they have hit upon a delicious combo of Assyrtiko (40%) and Sauvignon Blanc (60%). Assyrtiko by itself can be rather austere, with a great deal of vibrant acidity. I LOVE it, and think it one of the Mediterranean’s great food wines. But even more palates will cozy up to this blend. It starts with a nose of lovely fresh fruit–not herbal, as you might expect, but kind of melony. The palate is fairly rich, but the good acid that the Assyrtiko brings creates elegance. There is a haunting touch of barrel treatment in the wine’s flavors. A perfect wine for an Old World wine geek and a New World wine geek trying to find a wine to share at dinner. To make the wine richer still, serve not too cold. To make it more elegant still (my choice)…serve it VERY cold.

Remember that this is not your crisp, cut-through wine for oysters. It needs food that’s a little richer, a little less salty. Any kind of cream soup would be great, as well as proteins in cream sauces. It’s also a good white for plain, un-sauced roast meats: chicken, veal, pork.
