Just back from amazing nine days in northern Italy…

I LOVED my time in Piacenza! They specialize in coppa, salami, pancetta, many others. Wow!
I also loved the wines of the Piacentini Hills…of which you’ll soon be hearing lots more!
Throughout my trip (to Piacenza AND Verona)…pasta was the amazing pleasure it always is in Italy!

CULATELLO WITH MASSIMO SPIGAROLI
Probably the highlight of my trip: a night with Italy’s rock star salumi producer. I visited his farm (and its black pigs), his factory, his castle in which the factory is housed (replete with ambient peacocks), the one-star Michelin he keeps, and I spent the night in a castle duplex. PLUS: many hours with Massimo himself. Pig heaven!
