I found this simple seasoning when I worked at the organic bed and breakfast Due Papaveri in northern Italy. It was always freshly made, and elevated everything it touched. A pantry must, this salt is a great gift to make for your friends for the holidays.
YIELD: 3 cups
1 cup fresh garlic
1 cup fresh rosemary
1 cup of your favorite salt (mine is Fleur De Sel)
1. Chop the garlic, set aside.
2. Chop the rosemary, set aside.
3. Combine all ingredients and dry for three days.
4. Grind with a mortar and pestle.
