These super healthy muffins are made with oatmeal flour, rather than white flour, and sweetened with just the right amount of brown sugar. Grapeseed oil and yogurt create the perfect rich texture without any butter at all and just a hint of tang. These are golden on top, fluffy on the inside, and packed with sweet-tart blueberries. Make them your own by adding your favorite toppings, and toast to a new year full of tasty, wholesome treats with a glass of fizzy Roberto Negri Menalca Lambrusco Rosato.

Serves: 12

Ingredients

1.5 cups oatmeal flour

3/4 cup blueberries

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

3/4 cup dark brown sugar, packed

2 eggs

1/3 cup grapeseed oil

1/2 cup yogurt

1 teaspoon vanilla

Optional toppings: Oatmeal, chocolate chunks, dried cranberries, protein powders, more blueberries

Directions

Preheat the oven to 350°F. Mix together all dry ingredients other than sugar. Fold in the blueberries to 2 tablespoons of this dry mix. We will add this to the prepared mixture. This will ensure that the blueberries do not sink to the bottom of the muffins, but are well spread throughout.

In a blender, mix together sugar, eggs, oil, yogurt and vanilla, on a high speed for a minute. Now whisk together the dry & wet ingredients. Finally fold in the blueberries mixed in with the dry mix.

Scoop out this mixture in lined muffin tin. Top with any toppings of choice. Now, bake for 20-30 minutes, checking mid-way by inserting a pick in a muffin. If it comes out clean, your muffins are ready.
